
Chard Pasta Soup
One bunch chard (chop the stems like you would celery -- and roughly chop or tear the leaves)
2 or 3 stalks fresh garlic, minced (or less...or more -- this soup can handle plenty of garlic!)
1 quart vegetable broth or chicken broth
1 can diced tomatoes
9 oz. container tortellini (whatever flavor you like)
Sauté the garlic and chopped chard stems in butter or olive oil until fragrant -- making sure not to burn the garlic! Then add the vegetable (or chicken) broth and the tomatoes. Bring to a boil, add the tortellini, and simmer about 5 minutes. Add the chard leaves. Cook until all is tender, add salt & pepper to taste, and serve with freshly grated parmesan at the table. Serves 4.
