Simple Greens Soup


1 large onion, or 1 bunch green onions

6 cups water or stock

1 can kidney beans, drained -- or 1-1/2 cups freshly cooked beans

1 can diced tomatoes (or 16-oz. chopped frozen tomatoes, if you've got some)

1 bunch greens (or one head escarole), chopped

3 medium red potatoes, unpeeled and cut into 1/2-inch dice

olive oil

salt & pepper to taste

dash cayenne, if you want

Heat oil in large soup pot over medium heat, and sauté onions until tender. Raise heat to high and stir in everything else except the greens. Bring to a boil, then lower the heat and simmer until potatoes are done. Add greens and cook until they're wilted. Serve with freshly-grated parmesan cheese, if desired.
