Stuffed Pattypan

1 can beans (Great Northern, for example), drained

4 good-sized pattypan squash

3 stalks celery, chopped small

3 tomatoes, chopped

1 onion, chopped

1 apple, unpeeled and chopped

chili powder and salt to taste

Scoop out the inside of the squash.  Reserve about half of the scooped out squash and chop.  Microwave the squash shells for about 3 minutes on high, or steam them a little. 

Sauté the onion and celery.  When they start to soften, add spices, then the reserved chopped squash and tomatoes.  Cook down a little till some of the liquid has evaporated.  Add apple and beans.  Stuff the squash shells with this mixture, pouring any extra in the pan around the shells.  Cook uncovered in 350 degree oven for about 30 minutes.
