Winter Squash Salad

2 Tbsp lemon juice
1 Tbsp water
3-4 Tbsp olive oil
black pepper
1 lb. butternut or acorn squash
2 small apples
2 Tbsp sunflower seeds or toasted slivered almonds

Whisk lemon juice, water, black pepper (to taste) and olive oil. Set aside. Peel, seed and grate squash (need about 3 cups grated). Seed and grate apples (need about 1 cup grated). [you can peel the apples first, if you want] Mix squash and apples together, and stir in the lemon juice mixture. Top with sunflower seeds or almonds, and serve.
