Zucchini and Leek Soup

6 small or 3 large leeks, 1” slices
1 small sweet onion sliced
6 medium sized zucchini, 1 “ slices
Add water until you just cover ingredients
Salt & pepper to taste
1 tablespoon organic chicken broth – you can get this at Whole Foods in the bulk foods section
 
Bring to a boil and turn down to a medium heat and cook till vegetables are tender. About 45 minutes.
Pour into a deep mixing bowl or leave in the pan if the pan is at least 6” deep.  Puree with a hand puree thingy until smooth.
Add 1 wheel (6-8 sections) of Laughing Cow Swiss cheese and blend until smooth.  Taste for saltiness and enjoy.
