
Even-My-Husband-Will-Eat-Zucchini Cake

Makes 24 cuupcakes, or two layer cakes
1 C butter
2 C sugar
4 eggs
1 1/2 tsp cinnamon
1 tsp nutmeg
zest of one lemon or lime
1 T baking powder
1/2 tsp salt
1 1/2 C grated zucchini, drained in paper towels
2/3 C chopped nuts
2 1/2 C SIFTED all purpose flour
1/3 C warm water
Line a bowl with paper towels and drop in grated zucchini to subtract moisture. In mixing bowl beat butter and sugar and eggs until smooth and light. Mix in next five ingredients. Add by hand or low speed on mixer, zucchini and nuts. Fold in flour and water. Grease pan.
Bake cupcakes 25 min and bake layer cake 35 min. Allow to cool before removing from pan.
